Lemon-Miso Guacamole
A love note to miso: Dear miso, I love you spread on toast with a drizzle of honey. I love you in a pasta sauce. I love you as a base for soup. I love you in my morning oatmeal. I love you with my favorite tahini sauce, draped over roasted veggies or chicken. And most recently, I love you in guacamole. Recipe below
Ingredients
1 ripe avocado
1 heaping teaspoon of miso paste (mellow/sweet miso)
Juice of half a medium lemon
1 small shallot, minced
Optional: mix in a sprinkle of any of the following / anything else you’d like: dried turmeric, black pepper, aleppo pepper, cayenne, fresh cilantro or other fresh herbs
How to make it
Mix all together, add more miso/salt to taste. Enjoy with tortilla chips / your crunchy vessel of choice.
